Meet Jeppe Foldager
Jeppe Foldager is one of the most talented chefs in Denmark. He has worked as a chef in many of the country's most acclaimed restaurants and even aboard the Royal Yacht Dannebrog. Previously he was sous chef at Søllerød Kro and worked as head chef at Alberto K and Restaurant Kanalen.

At the unofficial world championship for chefs, Bocuse d'Or, Jeppe Foldager took to the podium with an impressive silver medal in 2013. From 2020 to May 2025, Jeppe Foldager worked as head chef at Dragsholm Slot in Odsherred, which holds one of the prestigious Michelin stars.

Jeppe Foldager has now stepped into a new role as gastronomic chef at Hotel Hesselet with a simple goal: a restaurant full of happy guests.
The hotel's restaurant has been valued by both critics and guests for many years, but Jeppe Foldager aims to raise the level even further – without compromising on a healthy working culture.
Cooking tip from Jeppe Foldager
Deep flavour takes time
Make sure to give the ingredient time in the pan so you get a good caramelisation – especially with meat. That's where the deep flavour develops. Finish the cooking with a knob of fresh butter, a lightly crushed clove of garlic, and a few fresh herbs that you can baste over the meat at the end.
