Delicious halibut with peas, crispy bacon, pickled pearl onions, ramson capers and brown butter. Optionally serve the dish with good bread or potatoes for a more filling meal.
If you cannot find halibut at your local fish monger, you can easily replace it with cod, turbot or other white fish.

unsalted butter

organic lemon

halibut fillets

tbsp
pickled ramson capers (can be omitted)
Pea shoots and dill for garnish

Instructions
Step 1/10
Peel the pearl onions.
Step 2/10
Bring a pot with malt vinegar, sugar and water to a boil, and boil the pearl onions for 2 minutes.
Step 3/10
Let them cool in the liquid, and halve them.
Step 4/10
Fry the bacon until crispy on a dry pan, and let it drain on paper towels.
Step 5/10
Boil the peas for approximately 1 minute in lightly salted water. Drain the water, and let them drain.

Brown the butter in a small pot, remove it from heat, and season with grated lemon zest, lemon juice, salt and pepper.
Step 7/10
Cut the fish into portion sizes, and fry them in butter on a pan for approximately 2 minutes on each side, until they are golden and cooked through. Be careful not to overcook them.

Season with salt and pepper.
Step 9/10
Plate the fish in deep plates, pour the butter sauce over, and top with pearl onions, pickled ramson capers, peas and bacon.

Garnish with pea shoots and dill, and serve immediately.
